A three-piece band leaves a lot of empty space between the parts. A pad sits underneath and glues them together, so the same musicians sound like more of them.
They cover transitions
The silence between two songs is where a set loses the room. A pad running through the change keeps the moment going while people find the next key.
They give you room to talk
Praying or reading over a held chord is far easier than doing it over nothing, and it does not ask a keys player to improvise under pressure.
